Historically, the medical uses of acetic acid are seemingly endless and include diagnostic uses for cervical cancer, treatment for cancerous tumors, antiseptic for strep throat, and topically for some strains of antibiotic-resistant skin infections. The name acetic acid derives from acetum, the Latin word for vinegar, and is the main active compound in balsamic vinegar. With all of its practical uses, researchers in recent years name even more benefits of this active compound, commonly consumed as vinegar.

In 2005, in a study conducted by Lund University in Sweden, researchers found that supplementing your meal with vinegar lowers the glycemic index of bread in a meal, helping to avoid blood sugar spikes. While the study also found an increase in satiety, or feeling full, but noted the subjective nature of that part of the study. The study stated the health benefits of consuming fermented foods and the exciting research that is yet to come.
