Deemed an “exceptionally perfect vinegar” in 1046 by the future emperor of the Holy Roman Empire, King Henry III, balsamic vinegar origins dates back to ancient times. While the term “balsamic” originated around 1747, the province of Emilia in Modena had long been established as the main area of production.
With centuries of recipes and rituals passed down through the generations, Acetum produces true Traditional Balsamic Vinegar of Modena PDO and Balsamic Vinegar of Modena PGI. Limited exclusively to the province of Modena, Acetum joins the region with the centuries of family recipes and tradition.
Today, the company produces 25 million liters of Balsamic Vinegar of Modena PGI and safeguards 5,600 casks of Traditional Balsamic Vinegar of Modena PDO.
“Balsamic Vinegar of Modena is without doubt a product of Italian gastronomic excellence, which has conquered the world. Our aging capacity – 14 million liters in casks and containers made from fine woods – confirms that we are the largest Balsamic Vinegar of Modena producer in the sector.”
